History of Pasty
From England to Leadville...
The Cornish pasty didn’t begin as a novelty — it was born out of necessity in the tin and copper mines of Cornwall, England.
Its roots trace back to the 13th century, but by the 17th and 18th centuries, the pasty had become a staple for working miners. They needed food that was portable, filling, durable, and easy to eat underground.
It was designed for the job. A thick, crimped crust acted as a handle, allowing miners to hold it with dirty hands and discard that portion after eating. Inside, a simple filling of beef, potatoes, and onion cooked together into a complete, hearty meal. The sturdy pastry kept it warm and protected in harsh conditions.
There’s even folklore woven into it — miners believed in underground spirits called “tommyknockers,” sometimes leaving behind a piece of crust as an offering for good luck.

Leadville Locals....
Karlyn's Pasty Co. is a creation by Dan and Lindsey, who have always wanted to build something together. Born in Leadville and the son of a Black Cloud/Climax miner, Dan brings those roots to the table. Lindsey brings decades of hospitality experience and learned early from Dan’s mom how to make a hearty Cornish pasty.
We believe Leadville deserves more good food made with care, convenience, and affordability. We want to feed people. We want to be part of this town's story. We want to do it by making something real, honest, and something that carries the weight of a tradition worth keeping.

Karlyn's Story
Our Inspiration...
Karlyn grew up in southwestern Wisconsin, a region shaped by Cornish immigrants who settled there generations before her. Many of our recipes are inspired by the "pasty ladies" Dan grew up with.
She is a descendant of those Cornish miners. As a miner’s daughter and the wife of a Leadville miner too,
she understands the pasty was rooted in comfort.
And by the way, Karlyn’s name is really Carolyn. However, her grandpa always called her “Karlyn”. So be it!
